Dough worked four times, before the three fermentation phases, sourdough starter, wheat flour, butter, Bourbon vanilla pods and candied orange peel are the main ingredients of this incredible Panettone.
However, Niko Romito does not stop there and interprets this Christmas classic with a dash of contemporary spirit, creating a special almond emulsion to replace some of the butter in the recipe, resulting in a lighter and more digestible Panettone, perfect to enjoy after a rich Christmas lunch.
