Paste di meliga are typical biscuits from the valleys of Cuneo. They have a golden colour, a crunchy texture, and a sweet taste without being cloying.
The true paste di meliga are characterised by simple ingredients: fresh eggs, quality butter, locally milled stone flours, and no synthetic chemical flavourings. They are best enjoyed at the end of a meal, dipped in a good glass of Barolo or to accompany zabaglione!
The paste di meliga from Mondovi are part of the Slow Food Sentinels, and Eataly has selected the best ones, those from Egidio Michelis.
